WELCOME TO MY NEW BLOG! Well, I finally did it! A friend of mine encouraged me to start a food blog, so let's begin!

In my journey as a chef, I've found that most people have a very limited knowledge of food. We usually eat and/or prepare what our parents prepared for us. It's what we consider our comfort foods. I have also discovered the comfort foods I grew up enjoying were not necessarily healthy for me. I've watched aunts, uncles, grandparents and the like suffer from heart attacks, diabetes, and so much more because of their diets. I grew up on Sunday dinners. I loved the time spent with my grandmother showing me how to make sweet potato cobbler. We would have elaborate dinners which included macaroni and cheese, string beans, pot roast, fresh yeast rolls- Oh my! Must I go on? Yum right? Well, not necessarily when it sent me into a deep sleep after each meal and it felt like I needed a doctor to revive me! Over the years, I found myself rushing to and fro- no Sunday dinners, but quick fast meals on the go- the golden arches mostly. I never seemed to taste anything, but the sickening aftertaste of those foods. I ate whatever was able to fit in my hand while driving and let's be honest- sometimes I still do!
Now before I go any further, this blog is not about dieting per say, nor is it a ploy to get you to starve yourself into a frenzy for healthy living. But, I want share my knowledge of foods. My hope is to encourage you to try new things, new directions and enjoy life with food.
Again, one thing that I've noticed in the people I encounter, much like I used to be, they have a very limited knowledge of food. I had no knowledge of Orzo, Jasmine rice...Curry spice or cilantro...Black beans or chick peas. Lawd help me if you ask me how to use them!
Once I entered culinary school, I realized I knew even less about foods. Yet my passion for food grew into a journey that has taken me across the U.S. where I have been very privileged to have lived in areas where food is the highlight of your visit. I've learned to take time to taste and enjoy the food all the while enjoying life with it! So I encourage you- and yes we will start with thyme - To take time to taste and enjoy the various foods of our region as well as others! After all, that's what we want to do, have more time to enjoy life! When you discover new things, you'll want to share them with your friends and family- and that's what food can do, bring us closer to our loved ones. It can teach us many things- whether good or bad, yet it can also bring so much enjoyment to our lives!
